Grappa is a traditional Italian brandy that originated in the Dolomites. There used to be mobile distilleries that traveled to local winemakers in the mountains to distill this Italian brandy for them from their matolina. The Val di Cembra region in the Dolomites is important mainly for the cultivation of the Chardonnay, Gewutraminer, Muller Thurgau, Nosiola, Schiava varieties. Mainly these varieties are used by the smaller distiller Martino Paolazzi for the production of his grappa Rachele and Cilien. Cilien is a grappa that is aged in oak barrels for around 2 years.
