Sparkling wine produced using the traditional method of bottle aging for 30 months. The pearling is very gentle and very persistent. The aroma has high intensity, complexity with notes mainly fruits with white flesh such as pear, peach, followed by toasted dried fruit and fresh bread. The typical structure of the Pinot Noir variety stands out in the mouth, which combines well with fresh acidity.
Vinification takes place in such a way that the grapes are harvested in 20 kg crates and directly poured into into the press, where they are pressed gently and carefully. The resulting must is placed in temperature-controlled tanks, where it is statically decanted, and then sent to the cider house for fermentation. Vinification is in stainless steel tanks at a low temperature (18-20 °C). At the end of fermentation, the wine is kept in contact with the must. At the end of fermentation, the wine is kept in contact with the wine. In this phase, cuvée is created by mixing wines from different selected varieties. In the spring, the wine follows a second fermentation, in the bottle, followed by aging on the lees, in a cool, dark and humid and dark environment with the strictest Metodo Classico rules for sparkling wines.
The cuvée is blended to create a fresh, fruity wine. The aging period, which is never shorter than 30 months, gives the wine the right aromatic complexity. The color is straw yellow with green highlights. The bouquet is reminiscent of honey, peach with white fruits, grapefruit and basil. In the mouth, the wine is spicy with an enveloping bubble and a long, sweet finish. Excellent as an aperitif, but above all - thanks to its indisputable individuality - an excellent way to accompany all courses.
The Pinot Nero and Chardonnay varieties are grown in the Colline della Langha area. Land it is formed by white clay interspersed with layers of calcareous sands, the vineyards are oriented to the south and southeast at an altitude of 2502-500m, the vineyard management method is guyot. Collection takes place at the end of August or beginning of September.
Alta Langa area : This is an area in Piemonte that is intended for the production of sparkling wine. A small appellation with a very long history. It was the first wine produced by the traditional method of aging in the bottle already in the middle of the 19th century in UNESCO as a world heritage. Pinot Noir and Chardonnay grapes are used here, either 100% or in variable percentages. There can be variants white, pink, brut, pas dosé, aging on lees for at least 30 months in compliance with very strict production regulations. It is characterized by a color ranging from pale straw yellow to dark golden reminiscent of original grapes, citrus fruits, accompanied by the smell of crispy bread. The harmonious mouthfeel is slightly spicy.
