Pinot Grigio or pinot gris is a white variety, very widespread in Italy,  the aroma is reminiscent of warm bread crust and acacia flowers. The taste is full, pleasant. Excellent as an aperitif or in combination with white meats, fresh cheeses and ham.

Pinot grigio is (pinot gray)  is a direct descendant of Pinot Nero, obtained by a special bud mutation. Like other pinot varieties, pinot grigio is a very complex variety that requires special conditions and attention during cultivation and production. It requires the stability of the habitat in which it is planted and prefers a very cold climate and compatible soils. Cultivation of the Pinot Grigio variety began in Burgundy, an area that still has the best climatic conditions for its development. Burgundy, with its 28,334 hectares of production, represents a full 3% of French wine production. Subsequently, its production spread throughout the world. 

Italian production started in the vineyards of Como province, later spread throughout the country. Currently, this variety is grown in individual regions such as: Friuli Venezia Giulia, Trentino Alto Adige, Veneto and Lombardy, which have all the necessary characteristics of the environment and soil. Pinot Grigio has achieved great success, especially in the last twenty years, and has become the most popular and most consumed wine in Italy, although currently the trend has changed and the demand for it in the Italian market has dropped sharply. For this reason, up to 80% of Pinot Grigio wine produced in Italian regions is exclusively exported worldwide, e.g. to countries such as: China, Great Britain, Japan and America, which are in increasing demand.

The aroma of this wine variety and its taste vary depending on the area of ​​production. In the case of Pinot Grigio, made from grapes grown in places with a permanent, cool climate, excellent body and structure, velvety delicate flavors and aromas of vegetables, flowers and fruits, and a pleasant aftertaste with balsamic notes are revealed.

If, on the other hand, the vine is grown in places where the climate is characterized by significant temperature fluctuations, we get a wine with an exclusively fruity taste and a distinct, noticeable body and bitterness. 

On the other hand, the color of Pinot grigio can change depending on the vinification method used: if fermentation takes place outside the skins, a lighter, more transparent wine is obtained, while if maturation takes place in close contact with the skins, a copper-colored wine is obtained.

Why we like it

Pinot grigio goes well with fish, white meat, appetizers and slices of meat. It is very often offered in restaurants, precisely because of its pleasant fruity taste.
