Pecorino grapes are grown at an altitude of 200 m.a.s.l. The subsoil of the vineyard has a medium texture with a tendency towards clay soils. The harvest starts in September. The grapes are hand-picked, the skins are separated, followed by maturation at a controlled temperature of 15-18°C in steel tanks. Subsequent aging also takes place in stainless steel tanks.
Pecorino is a variety grown in the Marche region. However, it also spread to the region of Abruzzo, Lazio, Tuscany and Liguria. It was registered in the Register of National Varieties in 1970. The Pecorina grape is medium-sized, cylindrical-conical in shape, slightly scattered. The berries have a thinner skin, not too prominent. The grapes are usually picked at the beginning of September. The grapes are generally vinified using the traditional method, with controlled temperature. The wine has a fresh, fruity aroma, intense, with notes of anise and field herbs. Well-structured wine, with good acidity, tasty, with a good proportion of alcohol and long persistence.
