Wine for true connoisseurs and lovers of older vintages. Lazzarito vineyards are located in the Serralunga d´Alba area.  Vinification takes place by de-stemming the grapes and  subsequently crushing  of grapes that are  heated to a temperature of 32-33°C, where the grape juice is separated from the pulp.  This happens very quickly, within about 3 days for optimal juice extraction including tannins. In order to prevent the tannin content from increasing during the increase in alcohol content, the temperature is lowered to 25°C. Then there is a regular process of pumping the separated matolin from the must, so that both components are mixed regularly. This process takes  20-30 days. Alcoholic fermentation immediately follows malolactic fermentation. For maturation, they are used  new barrels from Allier that are 50% new. The wine remains in the barrel for about 12 months and is then transferred to a larger barrel of around 2,000 - 3,000 liters, where it continues to mature for another year. Then bottling takes place, where the wine continues to age.

Good availability of water in the soil and temperatures above seasonal averages favored early germination starting from March, but above all throughout the fruiting period. The month of April was affected by little precipitation but unstable weather conditions, which recorded the lowest temperature of the year.  May ensured a good supply of water in the soil, which allowed rapid development of the vines and formation of leaves at very high temperatures. Flowering took place under excellent conditions. In the following months, the rainfall was not significant, but it allowed the regular vegetative development of the vines and the normal progress of the phases. August and the first days of September were characterized by a hot, humid climate and a complete absence of rain, which allowed the early varieties to ripen perfectly. Subsequently, at the end of September, temperatures dropped, which slowed down the ripening of medium-late varieties.  The year 2001 was 10% better than the year 2000.
