Zibibbo is the name of the white grape variety and the sweet wine that is made from it. The word "zibibbo" comes from the word zabīb, which means "raisins" or "raisins". The wine was introduced in Pantelleria, where almost all of the national production is still grown. Today, Zibibbo is grown in the modern "cordon with spurs" crop in Sicily and with particular success in the area between Erice and Mazara del Vallo in western Sicily. The vines grow on clay soils located 70 meters above sea level.
Zibibbo grapes are harvested in the first ten days of October, when the grapes undergo a natural drying process in the vineyard. Harvesting and subsequent destemming is done manually, followed by cold maceration and thermo-regulated fermentation. After reaching 13.5% vol, fermentation naturally stops, resulting in a residual sugar of approximately 100 g/l. The wine is then left to mature in the bottle for about 30 days. The wine obtained from zibibba is straw yellow, full of golden reflections, sweet and with a high alcohol content with a characteristic aroma. The color of the wine is golden yellow, in the aroma there are notes of candied fruit, the taste is dominated by honey notes supplemented with very ripe fruit. Serve at a temperature of 8-10°C. We recommend serving as a digestif with dessert in the form of amaretti, cantuccini, panettone or with desserts made of nuts and to mature cheeses
The vineyards are located in the western part of Sicily in the Valle del Belice region, where the vines grow on very sandy soil at about 70 m.a.s.l. The vineyards are oriented north and south and are guided by the Guyot system.
