White wine from the Piemonte region from the prestigious Fontanafredda winery. This is an autochthonous variety that is experiencing a resurgence. The bouquet is aromatic and evokes exotic fruits. It is fresh in the mouth, rounded with a long finish on the palate.

Product detailed description

The more golden color of the wine blends with its greenish reflections. In the nose, the bouquet is aromatic and evokes exotic fruits, as well as white-fleshed fruits. It is pleasantly fresh in the mouth, rounded with a harmonious and long finish on the palate. Served chilled, it makes a great aperitif and is ideal at the table with fish-based starters, seafood risotto and perhaps even mature cheeses. The vineyards are located in the Colli Tortonensi, at an altitude of 200-300 m.a.s.l. The method of managing the vineyards is guyot. The soil is  fine limestone.  The grapes are harvested exclusively by hand,  they come to the winery  in 20 kilo boxes. It is immediately de-stalked and crushed, cold macerated for 12 hours at a temperature of 8 °C.  At the end of the maceration, the grapes are gently pressed and the must is decanted after about 24 hours in the tank to separate the coarse sediments. Finally, alcoholic fermentation takes place inside steel tanks  and takes about 30 days at temperatures between 15°-17°C. Aging takes place in stainless steel tanks  for 10 months at a low temperature, keeping on fine lees to increase the aromatic complexity and sense of volume, before bottling. We recommend serving at temperature  10-12 °C..

Timorasso is an ancient Piedmontese grape variety that was on the verge of extinction in the 1980s. Carefully revived by Walter Massa of Vigneti Massa, the yellow-green Timorasso is now enjoying a revival in the production of dry white wine and grappa. Wines made from the Timorasso variety tend to be full-bodied with good acidity. It is an aromatic variety and can show tropical fruit in some examples and more floral notes in others. It responds well to aging in oak, which gives the wines a certain complexity that allows them to age for several years. Timorasso comes from the Colli Tortonesi region of southeastern Piedmont. Here it is produced as a varietal wine and must make up at least 85 percent of the labeled wine, the rest being Moscato Bianco and Favorita (Vermentino).
