This is a white wine with good character, straw yellow in color with greenish reflections. The aroma is broad, with an intense bouquet reminiscent of acacia flowers, lemon, lily of the valley and unripe apple. The taste is pleasantly dry, full and juicy. It is excellent served as an aperitif, but excels in pairing with starters and fish, crustacean and shellfish dishes in general. It is a wine suitable for summer, but its gastronomic marriages know no seasonal boundaries.
Vinification begins by gently pressing the grapes and immediately separating the must from the skins. Fermentation takes place at a low temperature (18-20 °C) in stainless steel tanks, after cooling and static decantation of the must. The wine is aged in stainless steel for about 2-3 months on fine yeast lees, after which it is bottled cold after spring stabilization.
Gavi di Gavi is an Italian dry white wine that comes from the hills around the ancient walled town of Gavi in the province of Alessandria, which is found in the Piemonte wine region. It is made exclusively from the local Cortese variety. The first mentions of this variety date back to Alessandria until the 17th century. Gavi di Gavi naturally got its name from the town of Gavi, which is the center of its production area. The wine received DOC status in 1974 and DOCG in 1998. This made it the second wine in history with DOCG status. Gavi di Gavi is made in many styles.
You can meet simple, fresh wines with strong primary aromatics, but also very complex and opulent Gavi, which has been aged for a long time in barriques. And of course with a whole range of wines between these two extremes. Typical Gavi di Gavi should be delicate white wines with fruity notes of apples and apricots in taste and aroma. On the palate it should show freshness, juicy acidity and an attractive to slightly salty minerality in the finish.
