Franciacorta Blanc de Noir Eronero is produced only in particularly hot years from a selection of grapes from two vineyards located in the municipality of Erbusco at an altitude of 250 m.a.s.l. The grapes are harvested by hand in mid-August. The yield is 90-95t/ha. Vinification of whole grapes takes place using the marmonnier press, which is an ancient pressing system that guarantees maximum respect for the characteristics of pinot noir grapes. Only flower must is pressed from the press. Alcoholic fermentation takes place in steel tanks at a controlled temperature between 16 and 18 °C. The basic wine lies in tanks until the spring following the harvest.
