It is made exclusively from the local Cortese variety. The first mentions of this variety date back to Alessandria  until the 17th century. Gavi di Gavi naturally got its name from the town of Gavi, which is the center of its production area. the wine received DOC status in 1974 and DOCG in 1998. This made it the second wine in history with DOCG status. Gavi di Gavi is made in many styles. You can meet simple, fresh wines with strong primary aromatics, but also very complex and opulent Gavi, which has been aged for a long time in barriques. And of course with a whole range of wines between these two extremes. Typical Gavi di Gavi should be delicate white wines with fruity notes of apples and apricots in taste and aroma. On the palate it should show freshness, firm acidity and an attractive to slightly salty minerality in the finish.
