Prosecco Romeo

has  light yellow, with greenish highlights.  The aroma is fruity, fresh, pleasant On the palate, you will appreciate numerous and delicate bubbles. We recommend serving as an aperitif, with starters and  vegetable salads, fish dishes,  fish  specialities, with parmesan-type cheese.  You are looking for the taste of a ripe apple. Prosecco Romeo is an ideal choice. Perfectly connected  fresh aroma and high-quality sparkling. 

Prosecco Juliet 

it is light pink, with the color of peach blossoms.  Pearling is creamy, soft and persistent. The bouquet is intense, fruity with floral notes. The taste is pleasant, with mild acidity and a taste of fresh fruit.  We recommend serving as an aperitif, with starters from simple finger foods to fried fish.

Grapes are grown on slopes with clay soil. The vinification of pink Prosecco takes place first with a short maceration for 24-36 hours at 8-10 °C. The first fermentation takes place inside a stainless steel tank at 18 ° C with selected  autochthonous yeasts. Part of red grapes is  vinified separately with a short maceration that gives the wine the right color and typical character.  The new wine is kept on the lees for one month, then it is filtered and decanted into autoclaves for the second fermentation, which takes place with the addition of additional selective yeast and lasts for 20-25 days. Then ripening continues, which lasts up to 40-50 days. It is then bottled and matured in the bottle for several weeks. Consorzia Prosecco DOC permission to produce Rosé Prosecco has been long awaited. By combining the permitted varieties of Glera and Pinot Nero, a real experience is created that will be loved by everyone who is looking for sparkling wines with quality sparkling and an elegant taste.

How Prosecco is made

Prosecco is an Italian wine produced from the Glera variety, which has been cultivated in the eastern part of Veneto since ancient times.  Previously, Prosecco was produced as a still wine without sparkling. The grapes are transported to the winery, where the woody parts, the stems, are separated from the grapes. Subsequently, there is a gentle pressing, where the grape juice is separated from the skins and seeds. After that,  unfiltered grape juice placed in a stainless steel tank where it is cooled between 5-10°C. During the first  during fermentation, the cloudy must is transformed into clear wine. The finished wine, without sparkling, is then transferred to another stainless steel tank, which has a special design to allow more pressure to be maintained inside. This tank is called an autoclave. By adding additional selected yeast to the autoclave, the secondary fermentation starts. This method is called Charmat Martinotti. The result is a sparkling wine that can be filtered and bottled.
