How Prosecco is made
Prosecco is an Italian wine produced from the Glera variety, which has been cultivated in the eastern part of Veneto since ancient times. Previously, Prosecco was produced as a still wine without sparkling. The grapes are transported to the winery, where the woody parts, the stems, are separated from the grapes. Subsequently, there is a gentle pressing, where the grape juice is separated from the skins and seeds. After that, unfiltered grape juice placed in a stainless steel tank where it is cooled between 5-10°C. During the first during fermentation, the cloudy must is transformed into clear wine. The finished wine, without sparkling, is then transferred to another stainless steel tank, which has a special design to allow more pressure to be maintained inside. This tank is called an autoclave. By adding additional selected yeast to the autoclave, the secondary fermentation starts. This method is called Charmat Martinotti. The result is a sparkling wine that can be filtered and bottled.
