Passerina IGT has a straw yellow color with greenish highlights. The fragrance is elegantly fruity with notes of apples and flowers. The taste is dry and pleasantly sour. It has good aromatic persistence and retains its characteristic aroma even two years after harvest. The color of the wine is straw yellow. The aroma is fresh, with notes of apple and flowers. The taste is dry, with pleasant acidity. The grapes are hand-picked followed by a 12-hour cold maceration at a controlled temperature. The vineyards are located 200-300 meters above sea level, the yield is lower. The grapes are gently pressed in the winery to obtain grape juice, which is left to slowly ferment at a low temperature in a stainless steel tank. It goes on sale during March.
The vineyards of this variety are located in the San Paolo di Jesi area, in the coastal area 50-100 m.a.s.l. The grapes are picked in the last ten days of September.
The name Passerina probably comes from sparrows that like smaller grapes. Passerina is a white grape variety native to central Italy. Widespread today mainly between the Marche and Abruzzo, its exact origin is disputed between the Marche and the province of Frosinone, while it is almost completely absent in the rest of Lazio. The curious name Passerina appears to derive from sparrows fond of their small grapes, although it is known by various synonyms, which has contributed to uncertainty about its origin. Passerina seems to belong to the Trebbiani family, with which it has often been confused, as well as Bombino Bianco, while others consider it a mutation of Biancame, an indigenous vine always present in the Marche. Passerina, despite its clearly superior quality, has recently ceded cultivated area in favor of Trebbiano Toscano, which provides higher yields and is significantly more resilient to adversity.

The wine will appeal to fans of fresh white wines with a slightly sour taste. Wine is very neutral and therefore will never tire you.
