Red wine made from two autochthonous varieties Nero d'Avola, Frappatto, which are grown mainly in Sicily in the Valle del Belice, Trapani region. The vineyards have a planting density of 5000 vines per 1ha, yield is 90q.li/ha. The subsoil of these vineyards is sandy-clay with an excessive deposit of dead parts. The harvest takes place in mid-September. The color of the wine is bright intense red, the aroma is characteristic with a touch of red berries. The taste is full, warm, harmonious with smooth and elegant tannins. We recommend serving with Italian pasta and soft cheeses. Serving temperature 16-18°C. The selected vineyards, which are located at an altitude of 300 to 600 meters, are managed in Guyot, on clay soils with a limited yield of grapes per hectare. The Frappato grapes are harvested at first ripeness, so all the typical freshness remains in the must, which is left to ferment very slowly in small steel tanks. The Nero d'Avola grapes, on the other hand, are left in the vineyard for slight drying and natural dehydration. Later, they are collected and stored in wooden crates with extreme care. After light pressing, the must ferments at a controlled temperature. These two musts then develop according to their typical characteristics, and when our "master" decides, they are slowly mixed, over time and in the proportions required by the individual harvest. The natural sweetness of the wine is obtained by interrupting the fermentation with a "cold" process. The wine ages for several months in steel tanks
