Wine color it is brilliant pink, the taste is harmonious, smooth, a very pleasant finish. The vineyards are located near Barbarano, near the Euganei and Abano hills, a world-famous area for its thermal wellness centers thanks to its sulphurous and healing waters. Pinot Nero vineyards have been growing for the last 20 years on this rich soil, which is characterized by several features, such as the ability to retain the moisture achieved at night and efficient drainage during rainy days. In addition, the area was volcanic, so it is full of rich minerals and clay. This gives the inimitable qualities of the grape compared to the world's Pinot Nero production, which in Rosapasso are distinguished by the complexity of the bouquet, the smooth palate and the perfect balance. This Pinot Nero rosé is a structured wine, fresh and inviting with a long and juicy finish. The vines are trained with an accelerated cordon and the Guyot system.
Grapes are gently pressed, so the extracted must is pure juice. Cryomaceration, which is processed before fermentation, primarily extracts the aroma more easily and efficiently directly from the inner part of the skin. Thanks to this process, the main aromas obtained are well-defined, delicate and fruity. Fermentation is carried out in stainless steel tanks at a controlled temperature. Finally, aging continues for several months in stainless steel tanks, while the wine is refined on its own yeast.

Pinot Noir can be recognized by the size of its clusters, small and compact. Grapes produce colorless juice and can therefore lead to the creation of white wines, especially in the case of Crémant de Bourgogne or Blanc de Noirs champagne, also used for the Italian region of Franciacorta. If the must remains in contact with the skin during maceration, red wine is created with a brilliant ruby red color that develops towards a pale color over the years.
Traditionally produced in monovarietal wines, it is a true interpreter of terroir with endless aromatic nuances. In its youth, it has aromas of fresh red fruit, cherry, blackcurrant and spicy notes of pepper and cinnamon that reveal empirical notes with toasty and smoky aromas. Over the years turns into a scent of candied fruit, cherries reminiscent of truffles, mushrooms, animal notes, leather. On the palate, Pinot Noir stands out for its delicacy and elegance, in the mouth they develop into a tannic texture with an assertive personality, always refined with great delicacy and freshness.
