Tullio Pranovi, a charismatic personality, was the first founding member of the Colli Vicentini winery. Prosecco DOC Millesimato was dedicated to him, from Glera grapes harvested, selected and sparkling according to the Charmat method (Martinotti method). A tribute to the man who helped shape the roots of this company that was born with a great vocation in the field of sparkling wines. A very elegant sparkling wine based on the Glera variety. This variety is located in the eastern part of the Veneto region, near the city of Vicenza. The variety is harvested at the beginning of September. Most of the vineyards are oriented to the south or west, precisely so that the grapes have enough sunlight and thus reach optimal maturity. The aroma is characteristic of Renetta apples, accompanied by notes of acacia. The taste is fresh, dry. Ideal as an aperitif for extraordinary occasions. The designation Millesimato means that selected grapes were used for the collection and, above all, that the grape juice comes from only one harvest year. This product must not contain grape juice from two years old.

How Prosecco is made
The grapes are transported to the winery, where the woody parts, the stems, are separated from the grapes. Subsequently, there is a gentle pressing, where the grape juice is separated from the skins and seeds. After that, unfiltered grape juice put into a non-zero tank where it is cooled between 5-10°C. During the first during fermentation, the cloudy must is transformed into clear wine. The finished wine, without sparkling, is then transferred to another stainless steel tank, which has a special design to allow more pressure to be maintained inside. This tank is called an autoclave. By adding additional selected yeast to the autoclave, the secondary fermentation starts. This method is called Charmat Martinotti. The result is a sparkling wine that is filtered and can be bottled. The longer the maturation in the autoclave, the more durable and finer the sparkling you will achieve.
