Wine obtained from 100% Glera grapes in the UNESCO-listed Conegliano Valdobbiadene DOCG area. Exploring the gentle hills of Conegliano, small outcrops with a steep terrain shape and distinct slopes arise in it: they are called RIVE. Those vineyard lines from BORGO ANTICO are called "RIVE di OGLIANO".
The extra brut sparkling wine has zero residual sugar, it is very refined; in the aroma, the fruity and floral notes typical of Prosecco are clear, it has a very fine and elegant perlage with an inimitable taste. It can be combined as an aperitif, in appetizers and first courses. Made from the Glera grape variety harvested from the elevated Rive di Ogliano vineyard in the Conegliano area. Vinification is based on 50% cryomaceration of finely crushed grapes for 18 hours at a temperature of around 6°C and 50% pressing of whole grapes. The aroma is reminiscent of notes of white acacia flowers with a hint of fruit, predominant apples and pears, still unripe. Pearling is very gentle and persistent. The taste is dry, harmonious, pleasant, which leaves the palate dry, inviting for another sip. The area is Veneto Conegliano, heavier soil sometimes with the presence of mud. exclusively hand-harvested, soft pressing, cold cleaning of the musts with the start of fermentation at 16°C with selected yeasts. After fermentation, 2/3 decanting is carried out to remove the coarser lees, and then a stop to the cement with noble lees is carried out using the batonage technique. This process serves to increase the structure of the wine and limit the use of sulfites. Secondary fermentation: according to the Martinotti-Charmat method. Filtered and bottled under a pressure of 5 atmospheres. Aging: in the autoclave for 6 months, then 1-2 months in the bottle.
