Roero Arneis from the Fontanafredda winery is a white wine with a bouquet of exotic fruit, ripe pear, hawthorn blossom and acacia honey.

Wine color  it is an intense straw yellow with greenish reflections. In the aroma, the bouquet is reminiscent of exotic fruits, ripe pear, hawthorn blossom and acacia honey. It is pleasantly enveloping in the mouth, soft, sweet with acidity that adds a fresh aftertaste. Served chilled, it is a great aperitif. At the table, it is ideal with fish appetizers, light first courses, risotto and pasta. The vineyards are located in the Roero DOCG area at an altitude of 200-300 m.a.s.l. The vineyard management method is guyot. The subsoil is sandy and clayey. 

Grapes are delivered to the winery in crates weighing 20 kg. 20% of the grapes are destemmed, crushed and cold macerated for 24 hours at 10°C. At the end of the maceration, the grapes are gently pressed. At the same time, the rest of the grapes are fed directly into the press without crushing, and the free juice is separated from the skins by soft pressing. The must obtained by both production methods is stored separately in stainless steel tanks with a controlled temperature, where after cooling, static decantation and bottling of the must, fermentation takes place at a low temperature (18-20 °C). At the end of fermentation, the wine obtained by cryomaceration is combined with the wine produced in the traditional way and stored at 5 °C to prevent malolactic fermentation. Wine aging takes place in stainless steel tanks  for 4 to 5 months at a low temperature, keeping the wine on fine lees to increase aromatic complexity and volume. After cold stabilization, it is bottled before summer.

Arneis  is a variety grown in  Piemonte, since 1478. In the 18th century, the variety was spread throughout the Roero area. However, in vinification, it was not a wine as we know it now, a white dry wine, but a sweet wine, as it was in high demand for the given period. Not only that: in the vineyards, the white Arneis vine was alternating with the red Nebbiolo vine, which had the effect of attracting birds from the vineyard, where there was only the red variety, and thus preventing damage to the vineyards. The commercial success of the Arneis variety dates back to the 1930s, consumers' tastes are beginning to focus on white dry wines, fresh, fruity and easy to drink.  The Arneis grape is medium - smaller, pyramidal in shape, with one or two wings, compact, green-yellow in color or yellow-grey, depending on the orientation to the sun. Graduation is roughly in the third decade of September.  Wine is demanding mainly for its vinification. Straw yellow in color, with aromas of flowers, herbs, white fruit, full in taste, with pronounced acidity, in the end it can be  notes of bitter almonds. In the past, it was added to Barbera or Nebbiolo red wine to soften the taste.
