Its advantage is that it contains the characteristics of the best wines Valpolicella and supplemented with matolina after re-fermentation for Recioto or Amarone  The harmony of its olfactory aromas is thus complemented by a robust body, but harmonious and correct alcohol content for a wine of this temperament. The color of the wine is intense ruby ​​red, there are tones in the aroma cherries, cooked plums, spicy, spicy, very complex, reminiscent of Amarone. Dry with soft tannins that give the wine fullness and tenderness. In terms of aroma and taste, it can be classified among the great wines, GRANDE VINI. The name of Ripasso wine is derived from the Italian word "ripassare". It means that the red wine under the name Valpolicella is re-fermented on the lees of the Amarone wine. "Ripassa", the high-quality marc of the Amarone wine is reused to make Ripasso wine. This completes the process of mainly organoleptic properties in wine. We recommend serving with second courses, with meat dishes, with game, with harder aged cheeses.  The altitude of the Valpolicella vineyard is 250 m. n. m., the vineyards are guided by the Gujot system. The soil is sandy-clay, with a large deposit of dead parts, some vineyards are of volcanic origin. The grapes are picked in the first half of September. 

Varietal composition:  Corvina 50%, Corvinone 20%, Rondinella 25%, Oseleta 5%

The Corvinone variety  is a red Italian variety, grown mainly in the Veneto region, in the northern part of Italy. In 2010, the total area was 930 ha. Corvina is a variety that is mainly blended with other red varieties such as Rondinella, Molinara and other autochthonous varieties mainly from the Valpolicella region. Corvina is dominant in red wine called Valpolicella or Bardolino.

 The Corvina variety is another red variety grown mainly in the Valpolicella and Bardolino areas. It forms the basis of great wines such as Amarone and Reciotto.
