Elegant wooden box with Neropasso logo, which contains 6x bottles of Neropasso red wine.

Biscardo Winery has created this unique combination of red varieties: 40% Corvinone, 20% Cabernet Sauvignon and 20% Merlot under the name of NEROPASSO wine. The wine is produced using a very interesting technique, similar to that used for Amarone in Valpolicella. Some of the grapes are left to dry before pressing, so that a more pronounced, fuller taste is achieved. Drying grapes is a typical technique, mainly for the Veneto - Valpolicella region. This is followed by maturation in a stainless steel tank and then in larger Tonneaux barrels. It is the "Appassimento" technique that is essential for obtaining high-quality wines. It is a demanding job, only healthy grapes, perfectly ripe, must be selected for this passage. The grapes are stored in large plastic crates, spaced further apart to prevent creasing and to ensure sufficient air supply. The crates are placed in the wine cellar, where air is regularly ventilated and temperature and humidity are controlled. Roughly 50% of the grapes pass through this technique. Subsequent maturation - 50% of the wine for 6 months in large oak barrels with a volume of 25 hl and the rest remains in a stainless steel tank.

The result is a wine of dark ruby ​​red color with a tendency to garnet tones with aging. The nose is spicy with hints of ripe red fruit, cherries, black cherries and plum compote. The taste is soft, velvety on the palate with fine tannins in the finish, persistent.  We recommend pairing with red meat, spicy cheeses or with pasta. The soil of the vineyard has brown to red soil, mostly on a muddy subsoil, the red soil is based on basalt and partly transitions to limestone. Each vineyard has a different composition, but a high concentration of limestone with a large amount of stones down to the first meter underground.

 The altitude of the vineyard is 300 - 350 m. n. m. The vineyard planting density is  3500 - 4000 plants per 1 ha. Management method: Cappuccino. Collection is done manually,  in the first days of September. For the drying technique "appassimento" is used  50% of grapes that  are left  dry in the cellar before it is pressed  Ripening is in progress, so  50% of the wine matures for 6 months in 25 hl barrels, 50% of the wine matures in a stainless steel tank. 

Why do I like it?

This is a full-bodied wine, with distinct tones, with very elegant tannins. The wine is suitable for pairing with food, but also by the glass alone.
